After I created this Peach Bellini and it was being enjoyed by my guests, we still had a few mini guests that wanted a sip. The peach cubes caught their eye and want to discover what the fuss was about. So I quickly mixed up a non-alcoholic version using my store cupboard favourite of elderflower cordial. I topped it off with sparkling water and served it in a Champaign flute, so they too could enjoy the fun. However, after tasting it myself, I realised this is also good enough for the adults, especially since the rosemary flavours the sparkling water nicely. Using the same peach cubes as before (purée of a ripe peach – you can substitute with tinned), the peach cube still dissolves slowly lending its aromatic flavour to the sparkling elderflower water.
500 ml Sparkling water, chilled
50ml Elderflower cordial
Sprig of Rosemary
1 Peach Sliced
- Pour the elderflower cordial and sparkling water in a jug and stir.
- Prepare your Champaign flutes or serving glasses. Place a peach cube in each glass with a slice of peach and half a sprig of rosemary.
- Top the glasses with the sparkling elderflower.
- Serve immediately
