Peach Bellini


The arrival of summer we can finally appreciate the sunsets as we enjoy our evening meals. It seems the best time to put in a little bit of effort and even extend the invitation to friends. That’s why I created this Peach Bellini. It is quick to make, but is far from a basic non-alcoholic beverage served in a Champagne flute. The peach purée is made in advance from a ripe peach (although you can use tinned peaches as a substitute) that is blended and frozen in gem ice cube moulds. Becoming more than just the base to this drink, the peach purée becomes multi-functional, adding flavour, cool temperature and aesthetic qualities. More peach cubes can be added to increase the depth of peach flavour according to taste. Garnished with a sprig of rosemary, the peach cube dissolves slowly as topped with cordial flavoured water.


500 ml Sparkling water, chilled

50ml Elderflower cordial

Sprig of Rosemary

1 Peach Sliced

Peach cubes



  1. Pour the elderflower cordial and sparkling water in a jug and stir.
  2. Prepare your Champagne flutes or serving glasses. Place a peach cube (add more to increase the peach taste) in each glass with a slice of peach and half a sprig of rosemary.
  3. Top the glasses with the sparkling elderflower.
  4. Serve immediately
