Balsamic Tomato Salad


The key to having a great tomato salad on your table is two things, have a range of colours and don’t be afraid of using fresh herbs. Fresh sage, parsley and basil brings out the flavour of the tomatoes whist the assortment of coloured cherry tomatoes looks enticing.
The balsamic dressing is a concoction of red onions, balsamic vinegar and virgin olive oils seasoned with fresh herbs and sea salt.

 

Prep Time :10 minutes   Serves: 4-6

 

Ingredients

2 tbsp Balsmic vinegar

2tbsp Virgin Olive Oil

Salt to taste

2 sprigs Fresh sage

3 sprigs fresh parsley

Bunch of basil leaves

500g Cherry tomatoes

 

Method

Combine the balsamic vinegar, olive oil and salt to taste (I usually use ¼ teaspoon of salt, balancing on the salty side rather than sweet, but its up to you on how you want it flavoured).

Slice the red onion and chop the fresh herbs, then mix into the balsamic dressing and set aside.

Wash and cut the tomatoes and mix with the dressing.

Serve and enjoy

Tip, add the balsamic and onion dressing to the tomatoes when you are ready to serve.
